Watermelon Feta Checkerboard Salad

  • ¼ of a small watermelon
  • 10.5 oz danish feta
  • 1 lemon, juiced
  • ⅓ cup olive oil
  • 1 tsp Vegetable Broth Garden Veggie 
  • ¼ cup of mint, finely chopped
  • Baby mint leaves to garnish
  1. Cut the feta and watermelon into equal sized squares. Use the feta height as your guide, ensuring you have an equal amount.
  2. On your serving platter combine lemon juice, olive oil, Vegetable Broth Garden Veggie  and mint.  
  3. Place the squares of feta and watermelon onto the platter in a checkerboard pattern.
  4. Garnish with baby mint leaves and serve.
