Dairy Free Fruity Mousse Parfait

  • 2 tablespoons Collagen Beauty
  • 1 x 10.6 ounces silken tofu
  • 4 tbsp maple syrup
  • 1 tsp vanilla extract
  • 14.1 ounces coconut cream (refrigerated)
  • rind of 1 lemon
  • Juice of ½ lemon
  • 1 punnet raspberries
  • 1 punnet strawberries
  • 4 passionfruit
  1. Open the can of coconut cream, discard the liquid and use the fat.
  2. Place tofu, maple syrup, vanilla extract, coconut cream fat, lemon juice, lemon rind and Collagen Beauty in a blender and blend until the mixture is smooth.
  3. Place into a container then in the fridge for 10 minutes.
  4. Place strawberries and raspberries in a blender and blend until macerated. 
  5. Layer the parfait with the berries then cream mixture then passionfruit. 
  6. Repeat until the glasses are full. 
  7. Top with halved strawberries.
  8. Place in the fridge until ready to serve.
