Cottage Cheese Protein Pancakes

  • 1 cup cottage cheese
  • 3 large eggs
  • 1/2 cup all-purpose flour 
  • 1/2 cup Organic Whey Protein Powder Vanilla
  • 1 tsp baking powder
  • ¼ teaspoon salt
  • ¼ cup milk
  • 4.2 oz fresh blueberries
  • zest of ¼ lemon
  • Butter or oil for cooking
  • Maple syrup for serving
  • Agave powder for garnish (optional)
  1. In a bowl, add cottage cheese, eggs, milk, and mix to combine.
  2. Add the flour, Organic Whey Protein Powder, salt and baking powder, mix to combine. 
  3. Fold in the blueberries and lemon zest. Let sit for 5-10 minutes.
  4. To cook, add some butter to a pan on a low/medium heat, then add some of the batter, cook for 2-3 minutes each side until golden, fluffy and cooked through. 
  5. Serve with maple syrup.
