Winter Fruit Chia Pudding

There's creamy and there's dreamy, and then there's our Winter Fruit Chia Pudding which is both of these things and so much more.

Your classic chia pudding is made even creamier thanks to Thriving Family, bringing it's delicious smooth vanilla flavour. Topped with the earthy, sweetness of Berry Immune as well as our favourite winter fruits and berries, the flavours are guaranteed to brighten anyone's day.

Finishing off the meal by topping with a selection of nuts and seeds means you'll be having a well-balanced breakfast that will sustain you well into the day.

  • 1 cup coconut milk
  • 3 tbsp chia seeds
  • 2 tbsp Thriving Family Smooth Vanilla
  • 2 tbsp pepitas
  • 1/2 tsp Berry Immune
  • 10 almonds
  • 5 cashews
  • 1 tbsp buckwheat kernels 
  • 1/2 tsp cinnamon
  • 5 walnuts
  • 1 tbsp fresh mint
  • 1 heaped dessert spoon of coconut yoghurt

Selection of fruits, we used:

  • 3 strawberries, cut in half
  • 6 raspberries
  • 1-2 plums, cut into cheeks and wedges

1. Prepare your chia pudding the night before by combining your chia seeds with milk, 1 tbsp of pepitas, Thriving Family and cinnamon. Place in the fridge overnight to set.

2. The next morning, add your set chia pudding to a bowl.

3. Ripple your Berry Immune through yoghurt, then add to the chia bowl.

4. Top with the fruit, nuts and mint leaves.

5. Enjoy!
