Skip your morning coffee when these overnight oats are on the menu. The added shot of espresso will not only create a delicious flavour base, it’ll also give you the morning buzz that you need to go, go, GO!
Make a date paste by placing dates in a bowl and cover with boiling water for 10 minutes to soften.
Then add dates and water to a high powered blender with a pinch of salt. Blend until smooth, scraping down sides of the blender as needed.
Add the date paste to the bottom of a glass jar.
Then add oats, Collagen Beauty, chia, plant milk, espresso and vanilla. Give it a light stir to combine without mixing into the date paste underneath. Put a lid on the jar and store in the fridge overnight.
When ready to serve, top with an extra tbsp of date paste, 1 tbsp cacao nibs and a tbsp buckwheat kernels.
