Easy Chicken Chow Mein

  • 2 tbsp olive oil
  • 1.11 lbs chicken thighs, thinly sliced (strips)
  • 0.77 pounds-1.11lbs fresh Organic singapore noodles - alternatively you could use buckwheat noodles
  • 1/2 green cabbage, shredded (about 4 cups)
  • 2 carrots, julienne 
  • 2 cups bean sprouts
  • 3 spring onions, chopped into 4 cm pieces 
  • 3 cloves garlic, finely chopped

Sauce ingredients: 

  1. Heat olive oil in a medium saucepan (or wok if you have one) on high heat and add chicken to cook.
  2. Meanwhile mix together all sauce ingredients 
  3. Once chicken is cooked through add carrot and cabbage to cook off for 3-5 mins
  4. Add spring onions and garlic and cook for a further 2 mins
  5. Boil kettle and reheat noodles to packet instructions
  6. Add sauce and stir though
  7. Finally add noodles and bean sprouts and mix until combined and heated through together
  8. Serve immediately with extra spring onions sprinkled on top

Note: Have all ingredients ready to go. It is a quick cooking method so requires everything prepared
